Kevin’s Texas Red Homestyle Chili
This hearty chili recipe might be called "Texas Chili", but don't worry, it's still got plenty of beans. In fact, Kevin Foley's 2023 World Championship Chili Cook-off® Homestyle Category winning chili has not just one or two, but three different types of Bush’s® Beans. With Kidney Beans, Pinto Beans and Black Beans, mixed with chopped tri-tip beef tenderloin, this recipe is enough to satisfy even the biggest of chili appetites.

Ingredients
- Spice Mix #1
- 2 Tbsp New Mexico chili powders like Mild Bill’s Gunpowder Foods Dixon or Hatch
- 1 Tbsp granulated onion
- 1 Tbsp granulated garlic
- 1/4 tsp cayenne powder
- Spice Mix #2
- 4 Tbsp Texas-style chili powder like Gephardt’s or Pendery’s Fort Worth Light
- 1 Tbsp ground cumin
- ¼ tsp jalapeño powder
- Homestyle Chili
- 2 lbs cubed tri-tip beef
- ½ tsp salt
- ½ tsp black pepper
- 2 Tbsp vegetable oil
- 1 can (14.5 oz) beef broth
- 1 small can tomato sauce
- 8 oz spring water
- ½ can Bush’s® Mixed Chili Beans in a Mild Chili Sauce (drained)
- ½ can Bush’s® Black Beans (drained)
- El Yucateco Chiltepin Habanero Hot Sauce
- Spice mixes
Cooking Instructions
- 1BROWN
Brown cubed beef in salt, pepper, and vegetable oil and drain.
- 2HEAT
Combine 1 can beef broth, 1 can tomato sauce, 8 oz water, and drained beef. Heat gently.
- 3SIMMER
Add spice mix #1 and simmer for 1 ½ hours.
- 4MASH
Sort through drained beans and discard broken beans (except pinto beans). Mash up a few broken pinto beans and add them to the chili gravy.
- 5SIMMER
Fold in remaining beans. Add spice mix #2 and simmer for 30 minutes.
- 6ADD
Add a drop of El Yucateco Chiltepin Habanero hot sauce and salt to taste.
