Black Bean Bow Tie Pasta Salad with Roasted Corn
Pasta salad is a deli staple and favorite for outdoor barbecues. But this subtly spicy recipe is versatile enough to serve anytime. Try making it as a side for your next Taco Tuesday or gameday party. We recommend using bow tie pasta, but feel free to give it some more pizzazz! Using different pasta colors or shapes is a fun way to put your stamp on the menu. You may think of a basket and checkered blanket when you think of pasta salad. But you can enjoy this recipe far beyond summertime. This dish keeps well and is perfect for a cozy potluck or packed lunch. You can mix it up by adding more veggies or different kinds of beans. Otherwise, it may become gummy and stick together. You can also coat the noodles in oil or add a few drops of oil to the pasta water.

Ingredients
- 1 pkg bow tie pasta, cooked and cooled
- 1 cup Bush's® Black Beans, drained
- 1 cup corn, roasted
- 1 pkg bacon, cooked, drained and minced
- 3 avocados, cubed
- ½ cup cotija cheese
- Juice of 1 lime
- 1 Tbsp Tapatio hot sauce
- 1 Tbsp sour cream
- ½ Tbsp mayonnaise
- Green onions, sliced
Cooking Instructions
- 1COMBINE
In a large bowl, combine all (except green onions) ingredients and toss until well combined.

Chill for 10 minutes.
- 3GARNISH
Serve and top with green onions.
