Ingredients

Serves: 2-4
  • 1 12-oz bag corn tortilla chips
  • 1 15-oz can red or green enchilada sauce
  • 2 15-oz cans Bush’s Black Beans, drained
  • 1 1/2 cups shredded cheddar
  • 1 1/2 cups shredded Monterey jack cheese
  • 4 scallions, thinly sliced
  • 1/4 cup coarsely chopped cilantro
  • 1 avocado, sliced
  • 1 pint cherry tomatoes, halved or quartered
  • Sour cream and salsa, for serving

Cooking Instructions

    LAYER

    Spread one layer of tortilla chips on the bottom of a large cast-iron skillet, spoon about 1/4 cup enchilada sauce, 1/4 cup beans, 1/4 cup each shredded cheese on top. Repeat the layering with the remaining chips, enchilada sauce, beans, and cheese.

    Cover the skillet with foil and place near a hot spot, but not directly on the fire, of a campfire and cook until the cheese is melted and the sauce and beans are heated through.
