BBQ Caribbean Red Beans
Spicy pork and Bush's® Red Beans are simmered in a rich sauce with ketchup, molasses, and mustard to make this crowd-pleasing dish. Want a little extra kick? Add one of your favorite hot sauces. Ingredients
- 1 Tbsp olive oil
- 7 oz pulled pork or chorizo (casing removed)
- 1 medium onion, diced
- 4 cloves garlic, chopped
- 2 jalapeno peppers, seeded and chopped
- ½ cup ketchup
- ½ cup molasses
- ¼ cup Dijon mustard
- 2 Tbsp brown sugar
- 2 Tbsp Worcestershire sauce
- 1 Tbsp hot sauce (or more to taste)
- ½ tsp ground ginger
- 1 can (16 oz) Bush's® Red Beans, drained
Cooking Instructions
- 1HEAT
Heat oil in a 10-inch skillet over medium heat.
- 2BROWN
Cook pulled pork or chorizo until browned. Drain; transfer meat to plate.
- 3ADD
Add onion, garlic and jalapeno to skillet; cook about 3 minutes or until onion is tender. Stir in ketchup, molasses, mustard, brown sugar, Worcestershire sauce, hot sauce and ginger.
- 4BOIL
Return meat to skillet and bring to a boil.
- 5SIMMER
Reduce heat and cook 2 minutes. Stir in beans. Simmer over low heat 15 minutes; stir occasionally.
- 6SERVE
Serve Warm
