Cauliflower Rice Bowl With Bush's® Taco Fiesta™ Sidekicks
This Southwestern-inspired bowl combines the goodness of cauliflower rice with the chipotle flavor of Bush's® Taco Fiesta™ Sidekicks, taco seasoning, cilantro & lime.

Ingredients
- 1 can (15.5 oz) Bush's® Taco Fiesta™ Sidekicks
- ⅔ cup low-sodium chicken broth
- 2 boneless skinless chicken breasts, about 1 lb
- 1 packet (1 oz) low-sodium taco seasoning
- 2 Tbsp tomato paste
- 1 head cauliflower, cut into florets
- ¼ cup chopped cilantro
- 1 tsp lime zest

Cooking Instructions
- 1HEAT
Heat Bush's® Taco Fiesta™ Sidekicks in a small saucepan until heated through. Keep warm.
- 2HEAT
Heat broth in a medium skillet.
- 3COMBINE
Add chicken and sprinkle with taco seasoning then stir in tomato paste. Roll chicken in liquid to coat.
- 4COOK
Cover with a tight-fitting lid and cook over medium heat until chicken is cooked through, about 10 minutes.
- 5SHRED
Using two forks, shred chicken, tossing to coat in sauce. Keep warm.
- 6PULSE
Pulse cauliflower florets in a processor into rice-sized piece
- 7SAUTE
Heat teaspoon of oil in a medium skillet then saute cauliflower rice until just tender, about 4 minutes.
- 8SERVE
Remove from heat and stir in cilantro and lime zest. Divide rice between bowls and top with shredded chicken, salsa, avocado, slaw and Bush's® Taco Fiesta™ Sidekicks.
