Chicken Cassoulet
Slow cooker cassoulet with tender Great Northern Beans, chicken thighs, sausage and veggies is a welcome, hearty dinner after a long day.

Ingredients
- 2 cans (15.8 oz) Bush's® Great Northern Beans, drained
- 1 tsp olive oil
- 8-10 boneless, skinless chicken thighs (about 1 ½ lbs)
- 3 medium carrots, peeled and diced
- 2 large onions, coarsely diced
- 1 lb smoked Polish sausage, cut into 1-inch pieces
- 2 cans (14.5 oz) diced tomatoes, undrained
- 1 cup chicken broth
Optional Toppings
Chopped parsley
Cooking Instructions
- 1HEAT
Heat oil in a 10-inch skillet over medium-high heat. Brown chicken with carrot and onion.
- 2ADD
Add skillet mixture to slow cooker. Top with sausage, beans, tomatoes and broth.
- 3COOK
Cover and cook 4-5 hours on low.
