Chickpea Chorizo Soup
You know you love chorizo. We know you love beans. Be careful, this recipe could stir up some warm and steamy feelings.

Ingredients
- 2 Tbsp olive oil or vegetable oil
- 2 medium white onions, diced
- 1 red bell pepper, diced
- 1 tsp dried thyme
- 1 tsp cumin
- 1 lb pork chorizo
- 2 cloves garlic, minced
- 1 bay leaf
- ¾ c short grain rice, uncooked
- 64 oz vegetable broth
- 3 cans (16 oz) Bush's® Chickpeas, rinsed and drained
- Salt and pepper, to taste
- Fresh parsley, garnish
- Sour cream, garnish
Cooking Instructions
- 1HEAT
In large pot, heat oil over medium heat.
- 2SAUTE
Add onions, peppers, thyme, cumin, and salt. Saute 3-5 min or until tender.
- 3COMBINE
Add chorizo. Break with spoon and stir. Cook 2-3 min. Add garlic, bay leaf, salt, and rice. Careful not to burn garlic or rice. Stir chorizo for even consistency. Add vegetable broth and Bush's® Chickpeas. Stir gently, then reduce heat.
- 4COVER
Cover pot and simmer for about 10-15 min or until rice is cooked.

Salt and pepper, to taste.
- 6GARNISH
Serve hot. Garnish with parsley and dollop of sour cream, if desired.
