Rustic Tuscany™ Chickpeas and Lemon Pepper Chicken
Add a little Mediterranean-inspired zhuzh to lemon pepper chicken with Bush’s® Rustic Tuscany™ Chickpeas. We think a family favorite just got a new best supporting side.

Ingredients
- 1 Tbsp lemon pepper seasoning
- 2 Tbsp olive oil
- 1 medium onion, halved and sliced
- 1 carton (10 oz) cherry tomato, halved
- 1 medium bell pepper, halved and sliced
- 1 pound chicken breasts, butterflied
- 1 Medium lemon, sliced
- 2 cans (15.5 oz) Bush’s® Rustic Tuscany™
Cooking Instructions
- 1PREHEAT
Preheat oven to 400ºF
- 2TOSS
Toss vegetables in 1 tablespoon of olive oil & sprinkle with lemon pepper seasoning
- 3LAYER
Layer vegetables in bottom of 9x13 baking dish and put chicken onto top of vegetables
- 4SEASON
Drizzle chicken with remaining olive oil and sprinkle lemon pepper on chicken. Top with lemon slices

Bake for 30 min or until internal chicken temperature is 165F
