  • Dressing Ingredients
  • 1 small shallot, finely chopped
  • 1 tablespoon yellow mustard
  • 2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • Salad Ingredients
  • 1 head romaine lettuce, cut into bite sized pieces
  • 1 head radicchio, cut into bite sized pieces
  • 4 ribs celery, thinly sliced
  • 2 carrots, peeled and cut into thin coins
  • 1 cup giardiniera, drained and cut into bite-sized pieces
  • 4 oz sliced salami, quartered
  • 4 oz baby mozzarella balls, halved
  • 1 can Bush’s Chickpeas, drained and rinsed

Optional Toppings

Pepperoncinis, for serving

Cooking Instructions

    WHISK

    Whisk together shallot, mustard, vinegar, olive oil, salt and pepper in a small bowl.

    COMBINE

    Combine lettuce, radicchio, celery, carrots, giardiniera, salami, mozzarella balls, and chickpeas in a large bowl.
