Chuckwagon Rollups
"Chuckwagon" pasta typically features a sauce made with ground beef and barbecue sauce. This version adds Bush's® Baked Beans and puts the sauce inside manicotti, finishing it off by wrapping each one in bacon for a smoky, flavorful dinner dish.

Ingredients
- Chuckwagon Rollups
- 1 8oz box manicotti
- 2 Tbsp vegetable oil, plus 1 teaspoon for manicotti
- 1 lb lean ground beef
- 1 small yellow onion, finely chopped
- 1 green bell pepper, finely chopped
- Salt and pepper
- 1 28oz can Original Bush’s® Baked Beans
- 2 C barbecue sauce, divided, plus more for serving
- 1 lb bacon
Cooking Instructions
- 1BOIL
Cook manicotti according to package directions, drain, and gently toss with 1 teaspoon vegetable oil so the noodles do not stick; set aside.
- 2SAUTE
Heat remaining vegetable oil in a large saucepan over medium high. Add ground beef, onions, and pepper, season with 1 teaspoon each salt and pepper, and cook, stirring occasionally, until the beef is browned and the onions and peppers are crisp-tender, 8 to 10 minutes.
- 3COOK
Add the Original Bush’s® Baked Beans and 1 cup barbecue sauce and cook over medium heat until the beef and bean mixture is slightly thickened, 10 to 12 minutes. Let the mixture cool slightly before assembling.
- 4ASSEMBLE
To assemble the roll-ups, spoon 1/4 cup bean mixture into cooked manicottis. Wrap each manicotti with 2 slices bacon; repeat with remaining bean mixture, manicotti, and bacon.
- 5COOK
To cook the roll-ups, place bacon-wrapped manicotti in a large skillet and place over medium heat. Do not heat up the skillet prior to cooking. Cook roll-ups, turning occasionally, until the bacon is crisping on the edges, 8 to 10 minutes. Brush with remaining barbecue sauce and cook roll-ups, turning, until the sauce is slightly sticky and glossy, 1 to 2 minutes.

Serve with more barbecue sauce.
