Ingredients

Serves: 10 to 12
  • Salad
  • 1 can (15 oz) Bush's® Black Beans, drained and rinsed
  • 1 can (15 oz) Bush's® Chick Peas, drained and rinsed
  • 1 red pepper, diced into 1/2-inch pieces
  • 1 yellow pepper, diced into 1/2-inch pieces
  • 6 green onions, thinly sliced
  • 1/2 cup sweet hot pickled jalapeños, finely diced
  • 2 cans fire roasted corn, drained
  • 1 cup cherry tomatoes, cut into eighths
  • 1 bunch fresh cilantro, chopped
  • 1 tsp curry powder or to taste
  • Large corn chips (on the side)
  • Dressing
  • 1/4 cup lime juice
  • 1 Tbsp juice from sweet hot pickled jalapeños
  • 2 tsp chili lime seasoning
  • 2 tsp Dijon mustard
  • 1 Tbsp honey
  • 1/2 cup olive oil
  • 1 tsp black pepper, freshly ground
  • Kosher salt to taste

Cooking Instructions

    COMBINE

    In large serving bowl, combine all ingredients except corn chips and set aside.

    • Black Beans

    • Chick Peas

    • Red pepper

    • Yellow pepper

    • Green onions

    • Sweet hot pickled jalapeños

    • Fire roasted corn

    • Cherry tomatoes

    • Cilantro

    • Curry powder

    • Corn chips

    BLEND

    Blend all dressing ingredients together in food processor or blender until well combined. Pour dressing over salad and mix. Refrigerate for 2 hours to blend flavors. Serve with corn chips.
