A bold twist on a classic favorite, this Curry Family Caviar swaps blackeye peas for hearty Bush's® Chick Peas and adds a flavorful kick with curry powder. Ingredients
- Salad
- 1 can (15 oz) Bush's® Black Beans, drained and rinsed
- 1 can (15 oz) Bush's® Chick Peas, drained and rinsed
- 1 red pepper, diced into 1/2-inch pieces
- 1 yellow pepper, diced into 1/2-inch pieces
- 6 green onions, thinly sliced
- 1/2 cup sweet hot pickled jalapeños, finely diced
- 2 cans fire roasted corn, drained
- 1 cup cherry tomatoes, cut into eighths
- 1 bunch fresh cilantro, chopped
- 1 tsp curry powder or to taste
- Large corn chips (on the side)
- Dressing
- 1/4 cup lime juice
- 1 Tbsp juice from sweet hot pickled jalapeños
- 2 tsp chili lime seasoning
- 2 tsp Dijon mustard
- 1 Tbsp honey
- 1/2 cup olive oil
- 1 tsp black pepper, freshly ground
- Kosher salt to taste
Cooking Instructions
- 1COMBINE
In large serving bowl, combine all ingredients except corn chips and set aside.
- 2BLEND
Blend all dressing ingredients together in food processor or blender until well combined. Pour dressing over salad and mix. Refrigerate for 2 hours to blend flavors. Serve with corn chips.
