Grandad Mack's Chili with a Twist
Put a twist on tailgating with the official recipe of Bush’s Chili Commissioner, Walter Arnett. Arnett’s recipe, based off of his Grandad Mack’s signature chili, uses plump and tender Kidney Beans in mild chili sauce for an award-winning taste. For an extra kick, two chipotle chilis in adobo sauce make this chili recipe the MVP of game day.

- 1 Tbsp unsalted butter
- 1 yellow onion, diced
- 1 Tbsp cumin
- 1 Tbsp chili powder
- ½ Tbsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 1 cup low sodium beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 1 Tbsp brown sugar
- 2 chipotle chilis in adobo sauce, diced (about 2 Tbsp)
- 1 can (16 oz) Bush’s® Kidney Chili Beans in a Mild Chili Sauce, undrained
- 1 can (16 oz) Bush’s® Pinto Beans in a Mild Chili Sauce, undrained
Optional Toppings
sour cream, cheddar cheese, avocado, green onions, tortilla chips
Cooking Instructions
- 1HEAT
Heat a large pot or Dutch oven on the stovetop over medium-high heat. Add ground beef and cook until browned, about 8-10 minutes. Once it’s cooked through, remove ground beef from the pot or Dutch oven and drain the fat on a paper towel-lined plate or in a colander. Set ground beef aside.
- 2ADD
Add butter to the pot or Dutch oven. Once it’s hot, add the onions and cook for at least 10 minutes (or until very obviously starting to caramelize).
- 3ADD
Add spices (cumin, chili powder, paprika, salt and black pepper) and garlic cook for one additional minute.
- 4COOK
Deglaze the pot or Dutch oven with a little bit of your beef broth, about ¼ cup. Add green peppers and cook until tender, about 6 more minutes.
- 5ADD
Add ground beef back to the pot or Dutch oven along with all of your other ingredients (the rest of the beef broth, diced tomatoes, tomato paste, brown sugar, chipotle chilis in adobo sauce and the most important part – Bush’s Chili Beans).
- 6BOIL
Bring to a boil, then reduce heat to low and simmer for 30-40 minutes.
- 7TOP
Top with cheddar cheese, sour cream, sliced avocado and green onions and serve with tortilla chips.
