Huevos Rancheros
You'll love this flavorful spin on the classic huevos rancheros recipe featuring Bush's® Beans, eggs and a fresh tomato salsa served with avocados.

Ingredients
- 1 can (15oz) Bush's® Black Beans or Classic Tex-Mex Black Beans, rinsed and drained
- ½ cup salsa
- 4 - 6-inch corn tortillas (or can substitute tostadas)
- 2 Tbsp. oil
- 4 eggs
- salt and pepper
- ½ cup queso fresco, crumbled
Optional Toppings
Avocados, pico de gallo, cilantro, crema, and hot sauce
Cooking Instructions
- 1RINSE
Rinse and drain Bush's® Black Beans.
- 2HEAT
Heat beans and salsa in a small saucepan over medium-low heat for 2-3 minutes or until heated throughout.
- 3WARM
In a skillet, heat corn tortillas until warm. (Option to use tostadas and heating is not necessary.) Set aside.
- 4COOK
Heat oil in skillet and cook eggs until sunny-side up. Season with salt and pepper.
- 5ASSEMBLE
Place corn tortilla (or tostada) on a plate and cover with warm bean mixture. Sprinkle with queso fresco and top with egg. Garnish with desired toppings.
