Not Just For New Years Blackeye Peas
The kind of dish that should be served year-round! We're talking Blackeye Peas and a little kick of cayenne. Great with pork chops, ham or served all by itself. These recipes were created with our gluten-free friends in mind. However, we recommend reading each label to make sure every ingredient suits your dietary needs. Ingredients
- 1 Tbsp bacon drippings
- ½ cup chopped onion (optional)
- 1 can (15.8 oz) Bush's® Blackeye Peas
- 1 small bunch collard greens, leaves only, thinly sliced (2-4 cups)
- ¼ tsp cayenne pepper
- ½ cup leftover cooked ham pieces, or more as desired
Cooking Instructions
- 1HEAT
Heat bacon drippings in heavy saucepan.
- 2COOK
COOK Add onion and cook until soft. Add blackeye peas with the liquid in the can, pepper, greens, and ham pieces.
- 3BOIL
Bring to a boil. Stir.
- 4SIMMER
Lower heat and simmer 30 minutes or longer, stirring occasionally.
