Pesto Cannellini Soup with Sausage
A simple soup that tastes great any time of year. And the beans pair perfectly with that sweet Italian sausage! Recipe created for Bush's® by Brandy O’Neil, author of cooking blog Nutmeg Nanny

Ingredients
- 1 Tbsp extra virgin olive oil
- 12 oz sweet Italian chicken sausage, sliced
- 1 small yellow onion, diced
- 2 tsp dried Italian seasoning
- 2 (15.5oz) cans Bush's® Cannellini Beans
- 1 (11.5 oz) jar fancy whole pimentos, drained and thinly sliced
- 4 cups chicken stock
- Grated Parmesan, for topping
Cooking Instructions
- 1HEAT
Add olive oil to six-quart soup pot and set over medium high heat.
- 2SAUTE
When oil is hot, add in sliced sausage, yellow onion and Italian seasoning. Cook for about 10 minutes or until sausage is slightly browned and onions are soft.
- 3SIMMER
Add in beans, sliced pimentos and chicken stock. Stir to combine, turn heat down to medium low and simmer for 20 minutes.
- 4GARNISH
Remove soup from heat and stir in pesto. Serve with a sprinkle of grated Parmesan.
