It serves up to six and uses fewer than 10 ingredients, making it perfect for an easy weeknight dinner the whole family will love. Ingredients
- 2 Tbsp olive oil
- 1 red pepper, chopped
- 1 onion chopped
- 1 Tbsp chili powder
- 1 can (14.5 oz) diced tomatoes
- 1 can (14.5 oz) pumpkin puree
- 1½ tsp salt
- ¾ tsp ground cinnamon
- 3 cans (16 oz) Bush's® Pinto Beans in Mild Chili Sauce
- Optional toppings

Sour cream, a sprinkle of cinnamon or pumpkin pie spice, or pepitas (pumpkin seeds).
Cooking Instructions
- 1HEAT
Heat oil in a 4-5 qt. pot.
- 2ADD
Add pepper and onion and cook until tender. Stir in chili powder and cook 1 minute longer. Stir in tomatoes, pumpkin puree, salt and cinnamon.
- 3SIMMER
Simmer, stirring occasionally, approx 10 minutes. Stir in Bush's® Pinto Beans in a Mild Chili Sauce (without draining) and simmer 10 minutes longer.
- 4GARNISH
Serve with a dollop of with sour cream, a sprinkle of cinnamon or pumpkin pie spice and top with pepitas (pumpkin seeds).
