Red Velvet Cupcakes
Recipe created for Bush's® Beans by Maureen Toman. These red velvet cupcakes are heartier and moister thanks to a special ingredient: Bush's® Cannellini Beans!

Ingredients
- 1 can (15.5 oz) Bush's® Cannellini Beans, drained and rinsed
- 1 pkg (16.5 oz) red velvet cake mix
- 1 large egg
- ½ cup apple sauce

Frosting of choice
Cooking Instructions
- 1PUREE
In small food processor, add beans. Pulse till smooth puree.
- 2MIX
Blend cake mix, pureed beans, egg, and apple sauce in large bowl at low speed until moistened (about 30 seconds). Beat at medium speed for 2 minutes.
- 3FILL
Use 2 cupcake pans with paper liners or sprayed with cooking spray. Fill each with ⅔ full of batter.
- 4BAKE
Bake in center of oven at 350 degrees F for 12-15 minutes. Cupcakes are done when toothpick inserted in the center comes out clean.
- 5COOL
Cool cupcakes completely before frosting.

Top with cream cheese, vanilla frosting, or other frosting of choice.
