Ingredients
- 1 pkg (16 oz) Long-grain white rice (well rinsed and drained)
- 2 cans (13.5 oz) unsweetened coconut milk (shake before using)
- 1 Cup water
- ½ tsp salt
- 1 Tbsp lime zest (optional)
- 2 cans (15.2 oz) Bush’s® Simmerin’ Caribbean™ Black Beans
Optional Toppings
cilantro and green onion
Cooking Instructions
- 1MIX
Rinse and drain rice in a colander under cold water. Place rice in saucepan with water, coconut milk, and salt.
- 2BOIL
Bring liquid to a boil. Stir and reduce heat to low setting. Cover pot with lid and simmer for 15 to 20 minutes until liquid is absorbed.
- 3MIX
Remove covered pot from heat and let stand for about 10 minutes. Fluff with fork and mix-in lime zest.

Warm Bush’s® Simmerin’ Caribbean™and serve over rice
