Ingredients

  • 1-2 pounds chicken drumsticks or chicken thighs
  • 1 bottle (16 oz) Caribbean or Jamaican-Jerk marinade 
  • 1 can (20 oz)pineapple tidbits 
  • ½ cup green bell pepper, diced
  • ½ cup red bell pepper diced 
  • ½ cup red onion, diced
  • 2 cans (15.2 oz) Bush’s® Simmerin’ Caribbean Black Beans

Cooking Instructions

    MARINATE

    Marinate chicken legs and thighs in bowl. Cover and refrigerate for 30 minutes or overnight.

    Mix together pineapple tidbits with juice, green and red bell pepper, and onion. Cover and refrigerate for 30 minutes or overnight.

    PREHEAT

    Preheat oven to 400ºF and place chicken in an oven safe dish, drizzling with any remaining marinade.

    BAKE

    Bake chicken for 30 - 40 minutes or until internal chicken temperature is 165ºF. For extra crispness, broil 2-3 minutes before topping with pineapple salsa.
