Slow-Cooker Pulled Pork Tacos
Recipe created for Bush's® Beans by Sarah-Jane Bedwell, RD, LDN. Shredded pork dripping with a spicy-sweet sauce, served with Bush's® Honey Chipotle Grillin’ Beans®. This slow-cooker recipe is worth the wait!

Ingredients
- 1 lb extra-lean pork tenderloin
- ½ tsp southwest chipotle seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 1 onion, chopped
- ¾ cup pre-made red enchilada sauce
- ½ cup low-sodium beef broth
- ½ cup barbecue sauce
- 2 Tbsp hot sauce
- 12 each corn tortillas
- 1 cup shredded cabbage
- 1 can (21.5 oz) Bush's® Honey Chipotle Grillin' Beans®

Cooking Instructions
- 1PREP
Place pork tenderloin in slow cooker.
- 2SEASON
Sprinkle chipotle seasoning, salt and pepper directly onto pork. Add onion, enchilada sauce, broth, barbecue sauce and hot sauce.
- 3COOK
Cook on low for 8 hours.
- 4SHRED
After cooking, shred pork with fork.
- 5SERVE
To serve, top corn tortillas with pork sauce from slow cooker and cabbage. Serve with Bush's® Honey Chipotle Grillin’ Beans®.
