Spicy Pinto Beans & Chicken Soup
Chili powder, chopped garlic and Bush's® Pinto Beans add a spicy kick to this quick and easy and chicken soup. Serve with fresh cilantro.

Ingredients
- 1 Tbsp olive oil
- 1 lb boneless, skinless chicken breast, cut into ½-inch pieces
- 1 medium onion, diced
- 3 cloves garlic, chopped
- 1 jalapeño, diced
- 1 Tbsp chili powder
- 1 can (16 oz) Bush's® Pinto Beans with Jalapeños, drained
- 1 can (16 oz) Bush's® Pinto Beans, drained
- 2 cans (14.5 oz) diced tomatoes, drained
- 1 can (8 oz) tomato sauce
- 3 cups chicken broth
Optional Toppings
2 Tbsp fresh cilantro, chopped Jalapeño, chopped
Cooking Instructions
- 1HEAT
Heat oil in a 4-quart saucepan over medium-high heat.
- 2BROWN
Add chicken breast pieces; brown slightly.
- 3ADD
Add onion, garlic and diced jalapeno. Cook 3-4 minutes; stir often. Add all other ingredients except cilantro.
- 4BOIL
Bring just to boiling.
- 5SIMMER
Reduce heat. Simmer, uncovered, 15-20 minutes.
- 6GARNISH
Garnish with chopped cilantro and jalapeño slices.
