Sweet Potato Breakfast Bowl

Ingredients
- 2 Tbsp olive oil
- 1 small yellow onion, finely chopped
- 1 small red bell pepper, finely chopped
- Salt and pepper
- 2 cups cooked sweet potatoes
- 1 can (15 oz) Bush’s® Black Beans, drained
- 1 tsp chili powder
- 2 fried eggs
- Avocado, for serving
- Cotija cheese, for serving
- Limes, for serving
Cooking Instructions
- 1SAUTE
Heat olive oil in large skillet over medium heat. Add onions and bell pepper and cook, stirring occasionally, until peppers are softened, 5-7 minutes; season with salt and pepper.
- 2COOK
Add sweet potatoes, black beans, and chili powder and stir to combine. Cook until potatoes and beans are warmed through, 4-5 minutes.
- 3SERVE
Divide bean mixture between 2 bowls. Top each bowl with a fried egg, avocado slices, and crumbled cotija cheese. Serve with lime wedges.
