Tasty Taco Fiesta™ Chicken and Rice Bake
Who knew a Taco Chicken and Rice Bake could get any tastier? Oh, that’s right, we did. This recipe for the Tasty Taco Fiesta™ Black Beans Chicken and Rice Bake adds the slow-simmered, rich chipotle seasoning of Bush's® Sidekicks™ Taco Fiesta™ Black Beans to chicken and rice for a delicious dish. Like we said, the tasty got even tastier.

Ingredients
- 1½ cups instant white or brown rice
- 1 whole rotisserie chicken, deboned and shredded (will use ~2 cups)
- 2 cans (15.1 oz) Bush’s® Taco Fiesta™ Black Beans
- 1 can (11 oz) corn with peppers, drained (Green Giant Mexicorn – steam crisp)
- 1 can (10 oz) red enchilada sauce
- 2 cups (16 oz) Mexican Style shredded cheese
- Substitution: 1-pound ground beef seasoned with taco seasoning instead of rotisserie chicken

Cooking Instructions
- 1PREHEAT
Preheat oven to 400ºF and spray a 9”x13” baking dish with cooking spray.
- 2HEAT
Prepare rice according to package directions
- 3MIX
In a large bowl mix chicken, rice, Bush’s® Taco Fiesta™, corn and peppers, enchilada sauce and 1 cup of cheese.
- 4COMBINE
Spread mixture evenly into baking dish and top with remaining cheese
- 5BAKE
Bake for 25-30 minutes or until heated through with cheese melted and bubbly.
