Ingredients
- 2 Tbsp olive oil
- 2 lbs ground beef
- 2 cups onions, diced (1 onion)
- ½ tsp ground mustard powder
- 1 red bell pepper, diced
- 1 Pasilla pepper (or green Anaheim)
- 4 cloves garlic, diced
- 1 tsp maple syrup (sweetness can be adjusted with more/less maple syrup)
- 1 Tbsp unsweetened cocoa powder
- 1 tsp cumin (whole or ground)
- 1 tsp black pepper
- 2 Tbsp chili powder
- 1 tsp cayenne
- ½ cup barbecue sauce
- 1 can (28 oz.) tomato puree
- 1 Tbsp balsamic vinegar
- 2 cups beef broth
- 1 tsp salt
- 3 cans (16 oz) Bush's® Kidney Chili Beans
Optional Toppings
1 cup red onion, roughly chopped (1/2 an onion), 1/2 cup cooking wine, 1 pinch salt, 1 teaspoon sugar, 1 each lime (sliced), Sour cream (to taste), Jack or Cheddar cheese (shredded), Jalapeño
Cooking Instructions
- 1SAUTE
In large pot, heat olive oil and sauté half of the ground beef with onions, until meat is dark golden brown.
- 2ADD
Add ground mustard powder, bell pepper, pasilla pepper and garlic and cook 5 minutes. Add maple syrup, unsweetened cocoa powder, cumin, black pepper, chili powder, cayenne, barbeque sauce, tomato puree, balsamic vinegar, beef broth, salt, beans and second half of the ground beef to large pot. Break up the meat and stir.
- 3SIMMER
Simmer 20 minutes. Turn heat to low and keep hot.
- 4OPTIONAL
In medium pot, caramelize red onions on medium heat, add cooking wine, salt and sugar and simmer until cooking wine is absorbed.
- 5OPTIONAL
In a small bowl, mix lime juice and sour cream together.
- 6GARNISH
Serve in chili bowls and top with choice of toppings, such as caramelized onions, lime sour cream or cheese.
