We had to give it our own spin, with a Southwestern-inspired bowl featuring our BUSH’S Black Bean Fiesta®. Try making it for lunch or go tortilla-free for Taco Tuesday.

It comes in a mild chipotle sauce with corn and peppers, so it’s ready to serve straight out the can—just heat and eat! Each part of this recipe comes with its own kick, so that when all ingredients combine, it’s a medley of Southwestern flavors. Tomato paste and taco seasoning give the chicken an extra saucy zing, and the cauliflower picks up flavor from the cilantro and lime zest. Of course, the beans come ready with their own fiesta of flavor.

  • 1 can (15.5 oz.) BUSH’S Black Bean Fiesta®
  • 2/3 cup low-sodium chicken broth
  • 2 boneless skinless chicken breasts, about 1 lb
  • 1 (1 oz.) packet low-sodium taco seasoning
  • 2 tbsp. tomato paste
  • 1 head cauliflower, cut into florets
  • 1/4 cup chopped cilantro
  • 1 tsp. lime zest
  • Cabbage


  1. Heat BUSH’S Black Bean Fiesta® in a small saucepan until heated through. Keep warm.

  2. Heat broth in a medium skillet. Add chicken and sprinkle with taco seasoning then stir in tomato paste. Roll chicken in liquid to coat. Cover with a tight-fitting lid and cook over medium heat until chicken is cooked through, about 10 minutes. Using two forks, shred chicken, tossing to coat in sauce. Keep warm.

  3. Pulse cauliflower florets in a processor into rice-sized pieces. Heat teaspoon of oil in a medium skillet then saute cauliflower rice until just tender, about 4 minutes. Remove from heat and stir in cilantro and lime zest.

  4. Divide rice between bowl and top with shredded chicken, salsa, avocado, slaw and BUSH’S Black Bean Fiesta®.
