  • 2 cans (15 oz) BUSH'S® Black Beans, rinsed and drained
  • Dressing:
  • 4 tsp fresh lime juice
  • 4 tsp rice vinegar
  • 4 tsp soy sauce
  • 2 tsp grated fresh ginger
  • 2 Tbsp sesame oil
  • Salad:
  • 1/2 lb cooked medium shrimp
  • 3 scallions, thinly sliced
  • 1 red pepper, diced
  • 1/4 cup chopped salted peanuts
  • 2 Tbsp chopped mint
  • 1 head Boston lettuce


  1. Whisk together lime juice, rice vinegar, soy sauce and ginger in a small bowl. Pour in the oil in a thin stream, mixing until incorporated.
  2. Combine the black beans, scallions and red peppers in a large bowl. Toss well with the dressing. Refrigerate, covered, until ready to serve.
  3. Just before serving, arrange lettuce on platter. Add mint, shrimp and peanuts to the salad and arrange on the lettuce.
