Bush’s® Silk Road Black Bean Salad
This light salad is ready in minutes. The Asian-inspired dressing is delicious over a salad of lettuce, shrimp and BUSH'S® Black Beans.

Ingredients
- 2 cans (15 oz) BUSH'S® Black Beans, rinsed and drained
- Dressing:
- 4 tsp fresh lime juice
- 4 tsp rice vinegar
- 4 tsp soy sauce
- 2 tsp grated fresh ginger
- 2 Tbsp sesame oil
- Salad:
- 1/2 lb cooked medium shrimp
- 3 scallions, thinly sliced
- 1 red pepper, diced
- 1/4 cup chopped salted peanuts
- 2 Tbsp chopped mint
- 1 head Boston lettuce
Directions
- Whisk together lime juice, rice vinegar, soy sauce and ginger in a small bowl. Pour in the oil in a thin stream, mixing until incorporated.
- Combine the black beans, scallions and red peppers in a large bowl. Toss well with the dressing. Refrigerate, covered, until ready to serve.
- Just before serving, arrange lettuce on platter. Add mint, shrimp and peanuts to the salad and arrange on the lettuce.
