Bush’s® Three Bean Confetti Salsa
Add a burst of fresh flavor to your next cookout. BUSH'S® Pinto, Black and Great Northern Beans combined with corn, red peppers and avocados make for colorful dip or a unique (and delicious) burger topping.

Ingredients
- 1/2 can (15 oz) BUSH'S® Black Beans, drained and rinsed
- 1/2 can (16 oz) BUSH'S® Pinto Beans, drained and rinsed
- 1/2 can (15.8 oz) BUSH'S® Great Northern Beans, drained and rinsed
- 1 tsp chopped garlic
- 1/4 cup red wine vinegar
- 1 Tbsp Dijon mustard
- 1/4 cup extra-virgin olive oil
- 1/2 cup cooked canned corn
- 1/4 cup diced red pepper
- 1 can (3 oz) chopped green chilies, drained
- 1/2 cup chopped red onion
- 2 Tbsp chopped cilantro
- 1 chopped avocado (cut right before using)
- Salt and black pepper to taste
Directions
- In a small bowl, combine garlic, red wine vinegar, and mustard in bowl. Let sit for 5 minutes. Whisk in olive oil. Set aside.
- Place beans, corn, red pepper, chilies, red onion and cilantro in a medium bowl. Pour in vinegar mixture, gently mix.
- Fold in avocado and adjust seasonings.
